Executive chef of Ten Mile Station a mountain dining outlet. The Chef is responsible for the overall quality, training, and execution of foodservice in the restaurant. Menu development, specifications, production, costing and inventory controls are a few of the duties required. Winter management includes the operation of food court, outdoor barbecue, banquets and private functions. Summer management requires the execution and management of all weddings at ten mile and assisting and supporting the other on mountain outlets with weddings and events. Summer projects will be assigned by the Resort Executive Chef with specific deadlines and job duties to be performed. Ensure staff and food quality will provide ski resort and lodging guests with a superior dining experience on a daily basis. Monitor and maintain financial performance of dining outlet including payroll, sales, inventory, worker's comp claims , etc.

Additional responsibilities include, but are not limited to:

  • Contributes to the overall success of the operation through innovation, training, and support of Vail Resorts vision

  • Holds staff accountable through daily staff line-ups addressing uniform standards, safety topics, and daily business levels

  • Be a constant professional and leader representing Vail Resorts standards through attitude and appearance

  • Able to keep abreast of new culinary trends and takes an active role during chef meetings and events

  • Effective communicator who is able to lead their team by setting a positive tone throughout the day

  • Work closely with the GM to align all staff both FOH and BOH to the overall vision of the business

  • Creates daily specials that can be effectively documented and costed for possible implementation on new and upcoming menus

  • Takes ownership of all areas of the kitchen including food quality, employee satisfaction, and guest satisfaction

  • Develops recipes and food production logs for entire operation and holds team accountable to them

  • Able to read a P & L statement and use forecasted skier visits and revenue to accurately purchase product needed

  • Creates waste logs to accurately track product

  • Ensures 100% compliance with all safety standards and sanitation policies

  • Is driven to establish a Zero footprint within operation

  • Be an effective listener and trainer. Able to convey menus and vision to staff

  • Be able to put in timely work orders when equipment is not working properly

  • Performs monthly kitchen audits as well as operational reviews with the GM

  • Menu planning, production and delivery

  • Assist in budget process and forecasting of business

  • Food safety across all operations. Maintains and updates MSDS books when needed

  • Ensures entire outlet operates under HACCP guidelines and adheres to Serve Safe Culinary Guidelines.

  • Maintain financial performance of operation related to food sales vs. spending and labor

  • Accurately schedule and review staff to budgeted labor. Responsible for Payroll exceptions, approvals, and labor distribution reports

  • Oversee ordering/receiving, cost transfers, variance reports and inventory control of all food, beverages, supplies, etc. purchased for the entire building.

  • Check and maintain food quality of all food served and produced

  • Responsible for hiring, retaining and training all food service personnel

Qualifications:

  • Minimum 5 years in high volume restaurant operation

  • Extensive Wedding and events experience

  • Minimum 5 years of direct management experience

  • Serve Safe certification required within 30 days of hire

  • Experience with Coupa purchasing software preferred

  • Knowledge of Microsoft Office suite required

  • English required, Spanish preferred
