We are looking for an experienced Executive Pastry Chef for a resort destination conference center and world class, family resort. The right candidate will lead a team that prepares a wide variety of desserts, wedding cakes and bake shop goods. He/ she will have a high level of culinary skill that will be matched or exceeded by their passion and creativity to develop amazing tastes and presentations. They will be capable of proactively handling the responsibilities of a diverse, high volume bake shop including production, ordering and receiving, overseeing and training bake shop operations staff along with the associated administrative responsibilities.

Responsibilities include (but are not limited to):

  • Lead a team that is responsible for the preparation of a variety of delicious goods such as cakes, cookies, pies, bread etc. following traditional and modern recipes

  • Maintain a fun and safe work environment that inspires teamwork

  • Create new, trending and innovative pastry and bake shop items for weddings and conference guests in an effort to regularly refresh our offerings and engage the interest of customers.

  • Creatively decorate and present desserts in a way that “Wow” our resort guests

  • Create, Implement and use systems to monitor and improve kitchen productivity

  • Must possess the ability to adapt to change and help challenge the status quo in an effort to improve products, service and production.

  • Maintain the high reputation of Keystone Conference Center and Keystone Resort

  • Follow Keystone Conference Service banquet guidelines.

  • Train all bake shop personnel on proper equipment use, proper technique and consistent item execution to specification

  • Work with conference services and sales managers on the development of event functions and weddings.

  • Maintain a working relationship with resort F&B outlets and, as necessary or guided, support them with bake shop products.

  • Responsible for scheduling, staffing, and controlling food and labor costs to meet budgeted and forecasted expense margins

  • Create a positive team atmosphere with emphasis on learning, instruction, and education of staff to our standards and those of the CMC Culinary Program.

  • Culinary Program - teach, assist, and coach culinary students in their pursuit of a degree. Previous teaching experience preferred. This program works closely with our local culinary program and will require teaching, mentoring, and grading of projects and skill sets.

  • Lead by positive example encompassing the Vail Resorts Core Values.

  • Follow Vail Resorts Brand Standards and company policy.

  • Discipline staff as necessary in accordance with company guidelines and procedures.

  • Staff bake shop in line with current structure model and to meet the seasonal volume needs of the outlet.

  • Work with conference center and resort management for timely and smooth event execution and high-level guest satisfaction

  • Personally participate in cake tastings with wedding clientele to deliver a wedding cake that exceeds their expectations

  • Maintain serve safe certification and records for culinary employees making sure all are current in their training.

  • Routinely and proactively assess property and culinary equipment and maintenance needs. Works with maintenance and management to keep operation in good standing.

  • As needed, works with marketing to increase market share for the conference center and Keystone Resort. May require travel, media coverage, and demonstration of culinary talents.

  • Maintaining exemplary cleanliness and adheres to local and state health department requirements.

  • Proficiency in Coupa purchasing system, PeopleSoft and MS Office preferred, or willing and able to learn upon hire.

  • Purchasing and receiving.

  • Attend resort manager, area F&B and conference center staff meetings and trainings with an expectation to participate and, at times, present.

  • Answer resort and guest communications in a timely manner

  • Other duties as needed.


  • Proven experience as Pastry Chef, baker or relevant role – required

  • Minimum of 3 years chef management experience - required

  • Certificate in culinary arts, pastry-making, baking or relevant field – required

  • Great attention to detail and creativity

  • Working knowledge of baking with ingredient limitations (pastries that are gluten free, sugarless etc.)

  • In depth knowledge food preparation and baking techniques and nutrition

  • Willingness to replenish professional knowledge

  • Must be serve safe certified with a strong knowledge of food safety guidelines

  • Excellent communication, organizational and teamwork skills

  • Be able to work long hours under stress

  • Be able to stand for long periods of time of up to six hours

  • A flexible schedule including weekends, holidays, early mornings and late nights

  • Be able to lift to up to 50lbs in a constant basis
